My long-time friend, John Sconzo (Docsconz), whom I have guided on numerous trips to Spain) came down from his home near Lake George, NY and we visited Mercado Little Spain on March 19, 2019.  Cochinillo asado (roast suckling pig) will be featured at Leña (Firewood), the wood-fired roasted & grilled meats and paella stand, at Mercado Little Spain at Hudson Yards, March 19, 2019. The paella pit with an authentic paella Valenciana at Mercado Little Spain being manned by one of the paella cooks. My long-time friend Rafael Vidal of Restaurante El Levante in Benisanó, is Spain’s greatest paella Valenciana maestro and he is the paella consultant for the Leña (wood-fired) paella and grilled and roasted meat stand at Mercado Little Spain. 

Specialty cuts of superb fresh Ibérico de bellota pork meat--called pluma, abanico, presa, secreto, lomo, etc.--from pigs fattened from feeding free-range for months on acorns in oak forests in southwestern Spain, will be available at Leña (Firewood), the wood-fired roasted & grilled meats and paella stand, at Mercado Little Spain at Hudson Yards.

Authentic Sevilla Gazpacho Doña María

Authentic Sevilla Gazpacho Doña María, named after my Spanish mother, María Franco, who showed my former wife, Diana Valenti, and I how to do it. Many Sevillanas use green pepper, I use red pepper. The six guarniciones are: diced tomatoes, cucumbers, onions (I use chopped scallions), green bell pepper (I use red), cubed bread and chopped hard cooked eggs. 

In latter day Spain, in the days before the crisis anyway, in some places, as a sign of their prosperity I guess, they began the fashion of added chopped jamón Ibérico as a garnish. I do not. That takes this wonderful all-veggie dish out of the vegetarian category, is superfluous and dimishes the greatness of the dish, IMHO.
