Gildas, one of the the most popular Basque Country pintxos (tapas), at PerritxiCo in Chamberi, an upscale barrio in Madrid. Gilda, an anchovy, guindilla picante green pepper (similar in taste to Greek pepperoncini peppers) and olives on a skewer or toothpick, is named after the popular 1940s Rita Hayworth movie "Gilda." The name Gilda comes from the suggestion that the curves on one of these pintxos reminded pintxos prowlers of Rita Hayworth's curves in the movie, which was very popular in repressive Franco Spain. At PerritxiCo, Gildas are served in tins used to can seafood in Spain.
At PerritxiCo, txangurro, a very popular classic Basque crab dish made with centollo (spider crab) meat, onion or leeks, bread crumbs, Sherry and Sherry Brandy that is baked and served in a crab shell.
PerritxoCo's twist on donuts with espresso. This is a savory Donut de Cocido Vasco is fulled with cocido vasco, Basque stew meat, and served with a side cup of the cocido broth. The donut is glassed with stew meat fat.
